Defecators

An inside view of the main hall in a former sugar mill.
In the background there are some defecators: behind the funny name, they represent a very important step of the process. In these cilinders the raw juice meets carbon dioxide and lime milk, in a chemical reaction called "carbonatation". Result is the precipitation of impurities (calcium carbonates). Then, the saturated juice is sent to rotating filters, to proceed in the extraction of sugar.
